Ossetra (also known as Oscietra, Osetra, or Asetra) caviar is one of the most prized and expensive types of caviar. This domestic caviar is a fresh black caviar from farmed Sturgeon.  We have learned that as Caspian Ossetra is facing extinction in its native habitat. Farming sturgeon is a very good way to continue the production of high quality caviar. Though farmed, the taste and flavor of this caviar are very close to the wild caught Osetra Caviar. The grains of medium size have a tender structure and just melt in your mouth uncovering a subtle nutty flavor with a slight sea note. The beads are of light to dark grey in color, and have a beautiful glistening appearance.

The USA farm that raises the Siberian Stugeon and produces this caviar, is one of the best aquafarms in the USA.  They use pure aquifer water that is used as drinking water, pure feed, that is free of hormones, antibiotics and other pollutants.  This ensures a high nutritional value and the highest possible quality caviar.
